CELEBRATING FALL with Classic Cocktails, Fried Oysters (nice oysters from Virginia, dusted with Maseca), Green Tabasco Chicken (roasted served with mashed potatoes and leeks & cabbage), Big Bowls of Gumbo (shrimp, sausage, okra and a dark brown roux) and 2 Bird Pate.
DESSERTS: In addition to the fall favorite Persimmon Pudding, Bill Smith's latest dessert additions are Buttermilk-Papaya Sherbert, Caramel Walnut Ice Cream and Chestnut Mousse.

As the national resurgence toward creating cocktails using fresh ingredients highlights what we've been up to for years, we thought we would re-introduce you to some old favorites: The Tom Collins (with Hayman's Old Tom Gin and fresh lemon juice), The Booker's Buck (Booker's Bourbon, housemade ginger syrup and fresh lime juice) and the Jack Rose (with Laird's Apple Jack, fresh lemon juice and a dash of housemade pommegranite grenadine) join the cocktail menu with old favorites like the Sazerac and the Frozen Mint Julep (with homemade mint sorbet and Rebel Yell).
BILL SMITH'S BLOG: Bill Smith's blog is back up and running. The latest entries are amazing travel guides to those interested in food and culture in Celaya and Mexico City. He's soon to post on the Sunday Supper South event in Atlanta and his upcoming Southern Foodways trip to Oxford, MS.
JAMES BEARD NEWS: This year Bill Smith made it to the final-finals for Best Chef Southeast at the 2010 awards held at Lincoln Center. And Crook's was for the first year a nominee for Outstanding Restaurant in the US. Tuesday, June 15th, Bill Smith cooked a sold-out dinner at the James Beard House in West Village, NYC.

FOR A GREAT LUNCH: Matt and Sheila Neal have opened Neal's Deli in downtown Carrboro. Check 'em out for some delicious sammies.
